Easy Date Swirls

This is my first attempt at date jam.  It didn't seem too complicated so I gave it a try.  Of course i could eat my delicious jam with toast and coffee but that seemed a little boring.  I had some phyllo in the freezer so it seemed like the perfect partner.

First I made my Jam here's the ingredients:

2 Cups of Dates (remove the pit)
3/4 cups of sugar
1 cup of water

Before you start pull phyllo out of the freezer to thaw while you prepare the jam.  I simmered this on really low heat for a while.  I wasn't in a hurry so i just let it break down and helped it a long by mashing with my wooden spatula.  After a while it turned into this beautiful amber jam.

Preheat oven to 400 degrees.  Next roll out phyllo dough with a little floor sprinkled on your board.  You don't need your dough too thin.  Cut into 3 long equal strips and spread a light layer of jam.  Roll like a sushi roll and cut into 1 inch slices and place on a silicone baking sheet or parchment paper on a cookie sheet.


Bake for 15 minutes or until golden brown, jam will be bubbling.  Cool down and serve....final product looks impressive and its super easy to make.  The problem I run into is the fact that I want to eat them all.  I'm reserving the extra jam in a plastic container for those in the hurry days with toast and coffee!!

Date and Greek Yogurt Smoothie

One of my favorite 3 ingredient Smoothie.  This perfect for breakfast or a pre-workout boost.  You get the protein you need and as much potassium as a medium banana!!  


Just 3 Ingredients!!
Ingredients:


2 Medjool Dates (take the pit out)
1 6 oz Chobani Peach Greek Yogurt (pick your favorite flavor or brand)
1/2 cup of Coconut Milk(Soy, Rice, Almond, Milk go with what you like)
1 cup of Ice (Optional)


Add all ingredients to blender and blend until dates are blended.

This was a delicious smoothie, if you have ever had a date shake (which  i love) this smoothie is NOT a comma inducing sweet.  The flavor of the tangy greek yogurt comes thru and nice little sweet pieces of date.  No sugar necessary its the perfect sweetness.  You can certainly substitute the greek yogurt for regular yogurt, but I personally like the extra protein in greek yogurt.  I had this for breakfast since I like my breakfast on the light side.  If you like a little more protein in your BF add half a scoop of vanilla protein powder.
